Strawberry and Coconut Cake

Ingredients - 50g coconut flour
- 6 eggs, seperated
- 2 tbsp sweetener
- 1 tsp baking powder
- 1 tsp vanilla esence
- 3 tbsp sugar free jam
- 15g dessicated coconut
- 2-3 tbsp water
Method
- Preheat oven to 180*
- Line and spray a 7 or 8″ square cake tin
- Sift flour and baking powder together
- Add egg yolks, sweetener, vanilla essence and water
- Mix well
- Whisk egg whites till stiff
- Fold whites into mixture and mix well
- Pour into cake tin
- Bake for 35 mins
- Cool on a wire tray
- When cool, spread the top with jam and sprinkle coconut flakes over
- Cut cake into squares, you should get 20 squares, each one 1 syn.
