Sweet Waffles

Ingredients

  • 40 g porridge, blitzed in food processor
  • 2 Mueller light yogurt, flavour of your choice
  • 2 eggs
  • fruit, fresh or frozen
  • Frylight

 

Method

  1. Put porridge, 1 yogurt and 2 eggs in a bowl
  2. Mix thoroughly
  3. Spray waffle pan with frylight
  4. Heat pan and pour half mix in
  5. Allow cook for approx 15 or 20 mins
  6. Place these on a plate and leave in a barely hot oven
  7. Repeat 4 and 5 with remainder mixture
  8. Serve with yogurt and fruit

I have an electric waffle pan ( Aldi ) and this mix makes 10 waffles. Delicious if you combine flavour of yogurt with same fruit e.g strawberries and strawberry yogurt.

This recipe can also be used as a pancake mix if you dont have a waffle maker.

Strawberry and Coconut Cake

 

  • Ingredients

  • 50g coconut flour
  • 6 eggs, seperated
  • 2 tbsp sweetener
  • 1 tsp baking powder
  • 1 tsp vanilla esence
  • 3 tbsp sugar free jam
  • 15g dessicated coconut
  • 2-3 tbsp water

Method

  1. Preheat oven to 180*
  2. Line and spray a 7 or 8″ square cake tin
  3. Sift flour and baking powder together
  4. Add egg yolks, sweetener, vanilla essence and water
  5. Mix well
  6. Whisk egg whites till stiff
  7. Fold whites into mixture and mix well
  8.  Pour into cake tin
  9. Bake for 35 mins
  10. Cool on  a wire tray
  11. When cool, spread the top with jam and sprinkle coconut flakes over
  12. Cut cake into squares, you should get 20 squares, each one 1 syn.
